Hazel, 28
Artisan cheese shop manager by day, foil fencer and backyard dahlia grower by late afternoon. When I'm not inspecting aging rinds or digging up tubers, I'm usually elbow-deep in grease bringing century-old hand-cranked ice cream freezers back to working life.
Life in Madison
• Running my favorite corner cheese counter downtown • Training épée and saber footwork a couple of nights a week • Trying to see how many varieties of dahlias can fit into one yard • Wardrobe usually consists of plum wool, mustard corduroy, and sturdy linen aprons
The perfect Sunday
Early morning trip to the farmers market, a long walk along the lake, and turning the crank on fresh brown-butter peach custard until someone's arm gives out.
What I appreciate
Curiosity, people who care deeply about a niche craft, and anyone willing to let me feed them experimental cheese pairings without making a face.
